Two tips to get eggwhites whisked to firm peaks that will stay firm for quite some time:
Add a pinch of salt: helps the emulsion and reach firm peaks.
Add some sugar: creates a "meringue" effect which keeps the peaks firm for a longer time.
A very good suggestion to get a chocolate mousse to maintain a good consistency for a longer period, day after day.
