Vegan Pizza

Serves: 8

INGREDIENTS:

  • 500g Cauliflower
  • 300g Tomato seasoned with herbs
  • 400g Tofu
  • 200g Green asparagus
  • 300g Paris mushrooms
  • 200g Cooked sweetcorn
  • 250g Cherry tomatoes
  • 4 tbsp Gallo Olive Oil
  • 4 tbsp Gallo Reserve Extra Virgin Olive Oil

PREPARATION:
Boil the cauliflower. Blend and strain.
Place the cauliflower on baking paper, arranged into your preferred shape and place in the oven to dry. Dice the tofu, sauté with the remaining ingredients using Gallo Olive Oil.
Place all the ingredients on the cauliflower pizza base and bake at 180º, until crispy. 
Drizzle with Gallo Reserve Extra Virgin Olive oil.

CHEF'S TIP:
If you are an ovo-lacto vegetarian as opposed to vegan, sprinkle some grated cheese over the pizza before placing in the oven.
