Skewer of Blinis with mixed grilled vegetables

Serves: 4

INGREDIENTS:

  • 100g Flour
  • 50g Potato Puré
  • 5g Bakers Yeast
  • 3g Salt
  • 75g White Beer
  • 100g Water
  • 20ml Gallo Reserve Extra Virgin Olive Oil
  • 1 Egg (White and Yolk separated)
  • 200g Vegetables (mushrooms, tomatoes, Spinach Leaves)

PREPARATION:
Sift the flour and the salt into a bowl. In another bowl, beat the potato puré with the yeast, the beer and the water, until properly mixed.
Incoporate the flour, cover and let rest for 2 hours at room temperature, mix once during this period.
Beat the Gallo Reserve olive oil with the yolk and add to the mixture with the yeast. In another bowl whisk the egg white until it is stiff. Then fold into the batter.
Heat the frying pan. With a big spoon or small ladel, place two or three circles of batter in the frying pan. Cook on a low flame, without moving, until the edges are cooked, with little bubbles bursting on the surface.
Grill the vegetables, except for the spinach leaves.
Put the blinis on the skewer, alternating with the vegetables.
Serve with mayonnaise made with the Gallo Reserve olive oil.
