Portobello Mushrooms, Stuffed au Gratin

Serves: 4

INGREDIENTS:

  • 4 un Portobello Mushrooms
  • 100g Cooked Rice
  • 100g Cooked Red Beans
  • 20g Red Pimentos
  • 20g Green Pimentos
  • 50g Onions
  • 5g Chilli peppers
  • 2dl Gallo Extra Virgin Olive Oil
  • 100g Mozzarella Cheese, grated

PREPARATION:
Sautée the chopped onion in the olive oil.
Add the pimentos cut into small squares and the chillis in round slices.
Add the beans and cook, stirring occasionally.
Add into the rice.
Take out the stem of the mushroom and fill with the above mixture.
Put the grated mozzarella on each of the mushrooms and put in the preheated oven at 170ºC for 15 minutes.
Before serving drizzle with Gallo Olive Oil.

CHEF'S TIP:
Serve with a green salad seasoned with Gallo Olive Oil.
