Lentil Burgers

Serves: 4

INGREDIENTS:

  • 300g Cooked (Brown) lentils
  • 100g Fresh laminated mushrooms
  • 1 Onion, in thin slices
  • 1 tbsp Flaxseed
  • 2 tbsp Chopped coriander
  • 1 tbsp Curry powder
  • 100ml Gallo Extra Virgin Olive Oil
  • Salt to taste
  • Black pepper to taste
  • Gallo Piri Piri Sauce to taste

PREPARATION:
Blend the lentils in a food processor or using a hand blender. Leave some whole.
Braise the onion in Gallo Extra Virgin Olive Oil until golden, then add the mushrooms and sauté.
Add the lentils, coriander, flaxseed and the seasoning, mixing well. Set aside to cool.
Divide the mixture into small burgers (if necessary, sprinkle with flour) and fry on both sides in a frying pan with Gallo Olive Oil.
Serve on multi-grain buns with spinach leaves, grated carrots and mayonnaise and saffron sauce.
