Vegetable Mix with Tuna and Gallo Reserve Olive Oil

Serves: 4

INGREDIENTS:

  • 400g Vegetable mix (zucchini, eggplant, tomatoes, green and red pimentos)
  • 50ml Gallo Reserve Extra-Virgin Olive Oil
  • 100g Canned tuna in olive oil

PREPARATION:
Sautée all the vegetable in Gallo Reserve Extra-Virgin Olive Oil and then blend into a purée.
While still warm mix in the crushed tuna chunks.
Serve with crisp mini toasts.
