Toasted Country Bread with ham and Poached Eggs

Serves: 4


  • 4 slices of country bread
  • 120g Cured ham, sliced
  • 4 un Eggs
  • 75ml Gallo Classic Extra Virgin Olive Oil
  • To taste * Parsley
  • To taste * Salt and Pepper from the mill
  • Gallo White Wine vinegar**

Toast the slice of country bread in the oven.
Place the slices of cured ham in the oven until dry and crisp.
Open egg into a pouch made from shrouding film, close making a drop shape and place into boiling water for 4 minutes.
Brush the slices of bread with Gallo Classic Olive Oil, and place the slice of ham, the parsley and the egg on top (tearing open the pouch).
Sprinkle with pink and black pepper.

** To poach the egg, boil 9 parts of water and 1 of Gallo White Wine Vinegar in a pan, then create spiral movement with spoon or whisker and  drop egg in centre. That way the egg white envolves the yolk.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
