Herbs and Citrus Marinated Olives

Preparation Time: QUICK
Serves: 8 to 10 servings


  • 1 Jar of Gallo Flavor Lemon Green Olives
  • 1 Jar of Gallo in Natura Black Whole Olives
  • 2 Tablespoons grated orange zest
  • 2 Tablespoons grated lemon zest
  • 2 Tablespoons grated Lime zest
  • 2 Tablespoons orange juice
  • 2 Tablespoons grated lemon zest
  • 2 Tablespoons grated lime zest
  • 2 Tablespoons finely chopped mixed herbs (such as rosemary, thyme, parsley, mint, etc)
  • 1/2 Cup of dry white wine
  • 2 Garlic cloves grated
  • 1/4 Cup Gallo Classic Extra Virgin Olive Oil

Place the olives, herbs, zests and garlic in a bowl.
In a separate bowl whisk together wine, olive oil and juices.
Pour over the olives.
Toss well then cover and place in refrigerator to marinate before serving.
Note: Olive oil solidifies when chilled so take the olives out of the refrigerator ½ hour before serving.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
