Gallo Pickles

Starters and Tidbits A- A+

Preparation Time: QUICK
Serves: 4


  • 500g Mixed vegetables (peppers of various colors, spring onions, carrots, cauliflower, mushrooms, aubergines)
  • 5dl Gallo White Wine Vinegar
  • 5g Peppercorns (white, black and rose)
  • To taste, Rock Salt
  • To taste, Garlic cloves and bay leaves

Cut the vegetables into large pieces, boiling them for the time they normally take to cook (i.e. first those that take longer (carrots and cauliflower) and a few minutes later the others. Cook for 5 minutes and then let cool in the Gallo vinegar.
Then put in a tight sealing jar and keep in the refrigerator after opening.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
