Endives Filled with Shrimps and Raw Tomato Paste

Serves: 4


  • For the raw tomato paste
  • 200g Tomatoes (Oval, Roman type) strong red color
  • 50g Onions
  • 10g Garlic
  • 5g Chilli peppers
  • 3dl Gallo Extra Virgin Olive Oil
  • To taste: salt
  • For the endives
  • 200g Endives
  • 300g Cooked shrimps
  • 200g Guacamole (avocado puree)
  • 50g Rocket Salad

For the sauce:
Cut the tomato into quarters and take out the pulp and seeds. Then cut into small cubes and put in a goblet.
Add the onion, garlic and the chilli pepper, well chopped.
Then add the olive oil and adjust the seasoning.

For the endives:
Separate the endive leaves, filling with rocket salad, guacamole, the raw tomato sauce and last the shrimp.
