Calabrese and Olive Mini Puffs

INGREDIENTS:

  • 125g Puff Pastry
  • 100g Calabrese spicy sausage
  • 25ml Olive oil Infused with calabrese spicy sausage
  • 25g Gallo Sliced Olives

RECIPE FOR THE CALABRESE INFUSED OLIVE OIL:
Heat up the Gallo Olive Oil over a low heat until it boils. Remove from the heat and add the calabrese sausage, cut into small pieces into the olive oil.
Once it has completely cooled down, blend using a food processor, sieve and store in a glass container.

PREPARATION:
Cut the calabrese into very fine pieces or use a food processor.
Roll out the dough until it is 2 to 3 mm thick and cut into long strips.
Brush with the calabrese infused olive oil.
Cover with the calabrese sausage and the Gallo Sliced Olives.
Bake in a hot oven (220ยบ) until the dough is cooked.
Remove from the oven, drizzle the remaining infused olive oil on top and serve hot.

CHEF'S TIP:
By choosing calabrese spicy sausage infused olive oil I want to have a strong calabrese taste so that the fat of the puff pastry is not felt. This intense flavor is harmonised with the slight acidity of the Gallo sliced olives.
