Pumpkin Cream with Chopped Vegetables

INGREDIENTS:

  • 200g Pumpkin
  • 100g Onions
  • 100g Potatoes
  • 1dl Gallo Extra Virgin Olive Oil
  • To taste: Salt
  • For the chopped vegetables:
  • 20g Onions
  • 20g Pumpkin
  • 20g Tomatoes
  • 5g Green Chillis
  • 5g Red Chillis
  • 2dl Gallo Extra Virgin Olive Oil
  • To taste: Salt
  • To taste: Pepper

PREPARATION:
Place in a saucepan the pumpkin, onions and potatoes cut into cubes.
Pour in the olive oil, water and a little salt.
Cook thoroughly.
Process with a hand blender and season.
For the chopped vegetables.
Cut the onions, pumpkin and the tomatoes into very small cubes.
Cut into thin slices the chillis and mix together with the olive oil.
Season with salt and pepper.
