Glory Soup

Preparation Time: QUICK
Serves: 4


  • 1lt Water
  • 250g Potatoes
  • 75g Onions
  • 125g Green beans
  • 75ml Gallo Reserve Extra Virgin Olive Oil
  • 50g Cubed tomatoes
  • Fresh mint, to taste
  • Salt and pepper from the mill, to taste

Boil the water, add the green beans (cut into small sections) and cook rapidly. Once cooked take out and put into cold water.
Then add the potatoes, part of the Gallo Reserve Olive Oil and the onions. Boil again until everything is cooked.
Blend everything in the saucepan.
Add the tomato cubes, part of the fresh mint and the green beans.
Aromatize with the rest of the mint and serve after drizzling with the rest of the Gallo Reserve Olive Oil.

Can be considered  a vegetarian option.
It is important to cook rapidly the green beans separately, cooling in very cold water to maintain their bright green color.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
