“Deconstructed" Caldo Verde – Portuguese Green Soup

Serves: 4


  • 1lt Water
  • 200g Potatoes
  • 50g Onions
  • 125g Collard green (leaves cut in very thin strips)
  • 100ml Gallo Classic Extra Virgin Olive Oil
  • 150g Smoked spicy sausage
  • Salt, to taste
  • 200g Sliced yellow corn bread with slices of smoked sausages

Prepare the soup base with the water, salt and part of the Gallo Classic Olive Oil, the potatoes, onions and the smoked sausages. Take out the sausages when cooked and blend the soup.
Boil the collard green in water and salt, and then plunge into very cold water.
Drain the collard and nestle in the centre of the soup plate.
Cut the sausage into small cubes and place on top of the collard.
Around this "island" serve the soup.
Drizzle the remaining Gallo Classic Olive Oil over the soup.
Serve with slices of yellow corn bread.

For the final touch, we can use a Gallo Classic Olive Oil infused with the smoked spicy sausage to intensify the flavor and the color.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
