Creamy Onion Soup with Olive Oil and Garlic Toast

Preparation Time: QUICK
Serves: 4


  • 250g Onions
  • 125g Courgettes (peeled)
  • 4 Baguette slices
  • 1 Clove of garlic
  • 1dl Gallo Olive Oil
  • Salt and pepper from the mill, to taste
  • 1lt Vegetable stock (ready-made)

Sauté the onions in 5cl/50ml of Gallo Olive Oil until they are lightly browned.
Heat the vegetable stock, add courgettes and onions, keeping 4 onion rings for garnishing.
Put baguette slices in toaster, then rub the garlic on the toast and then drizzle with Gallo Olive Oil.
Blend the soup, adjusting the seasoning.
Toast the onion rings in a non-stick frying pan.
Serve very hot with the toasted onion ring and the toasted baguette slice.
Drizzle with the rest of the Gallo Olive Oil.

Can be considered a vegetarian option.
