Cream of Five Vegetables Soup

INGREDIENTS:

  • 10g Onions
  • 10g Leeks
  • 30g Pumpkin
  • 40g Courgette
  • 30g Carrots
  • 5g Basil infused Olive Oil
  • 20g Filo pastry
  • 50ml Gallo Reserve Extra Virgin Olive Oil
  • Salt to taste

PREPARATION:
Cream: Slowly cook the vegetables with half the olive oil in a pan with a lid and add water only when they are soft. Blend the vegetables into a soup and add Gallo Reserva Extra Virgin Olive Oil.
Filo pastry strips: Cut the filo pastry into strips and brush with the basil infused olive oil (see recipe in our tips). Place the strips in the oven at 180ÂșC until they reach the desired colour.

CHEF'S TIP:
The filo pastry strips may be replaced with wholegrain bread cut into cubes, toasted with Gallo basil infused olive oil (wholegrain croutons).
