Vegetable Macedoine Salad with Mayonnaise Served with Shredded Chicken and Green Apple

INGREDIENTS:

  • 300g Mixed Vegetables
  • 150g Mayonnaise (made using olive oil)
  • 400g Chicken breasts
  • 1dl Gallo Special Selection Olive Oil
  • 1 Green apple
  • Chopped parsley
  • Vegetable stock
  • Chicken stock

PREPARATION:
Boil the vegetables in vegetable stock. Drain and cool.
Boil the chicken breast in chicken stock. Once cool, shred.
Coat the vegetables in mayonnaise, place the shredded chicken on top and the green apple over the chicken.
Sprinkle with chopped parsley and drizzle Gallo Special Selection Olive Oil over this.

CHEF'S TIP:
You can use leftover roast chicken for this salad.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
