Transparent Cod Fish

Serves: 4


  • 400g frozen cod fish loins
  • 200g rocket salad
  • 100g cooked chick peas
  • 100g cherry tomatoes
  • 50g sliced onion
  • 1un lemon
  • 75ml Gallo Extra-Virgin Olive Oil
  • Chopped parsley to taste
  • Pepper from the mill

Wrap the cod fish loins in transparent shrink wrap and flatten them. Place on the side each cod fish loin and add lemon juice, Gallo Extra-Virgin Olive Oil and coarsely milled pepper.
Place each cod fish loin on a bed of rocket salad and add the cooked chick pea, the cherry tomato, sliced onion and chopped parsley. Grizzle with Gallo Olive Oil.
