Lettuce Salad with sliced Goat Cheese, Almonds and Honey

Serves: 4

INGREDIENTS:

  • 200g Various types of Lettuce
  • 200g Goat Cheese
  • 50g Almond kernels with skin
  • 20g Honey
  • 75ml Gallo Classic Extra Virgin Olive Oil
  • 10ml Lemon Juice

PREPARATION:
Slice the goat cheese,  mix the honey and half of the lemon juice and pour over the cheese. Lightly toast the almonds (use an anti-stick skillet on a low flame) and then cut into little sticks. Place the lettuce leaves on a dish and on top the seasoned slices of goat cheese, and then sprinkle with the shredded almonds.
Season with Gallo Classic olive oil and the remaining lemon juice.

CHEF'S TIP:
The goat cheese is best sliced with a steel wire cheese slicer.
