Chicken Salad served with Rice and Crunchy Potato

Serves: 4


  • 200g Cooked Chicken (shredded)
  • 100g Long Grain Rice (cooked)
  • 100g Shoestring Potatoes
  • 1dl Gallo Classic Extra Virgin Olive Oil
  • 10ml Gallo White Balsamic Condiment
  • 100g Green and Purple Leaf Lettuce

Mix the cooked rice with the shoestring potatoes.
Place the green and purple lettuce leaves on the bottom of the salad bowl, cover with the shredded chicken and then, on top of this, the rice and shoestring potato mixture.
Mix the Gallo Classic olive oil and the Gallo White Balsamic Condiment for serving separately.

The mixing of the rice and the shoestring potatoes should be done just before the salad is served, otherwise the rice will moisten the shoestring potatoes, and the mixture will loose its crunchiness.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
