Primavera Pasta

Serves: 1

INGREDIENTS:

  • 125g Wholegrain fusili pasta
  • 40g Carrots
  • 40g Courgette
  • 40g Mushrooms
  • Gallo Moonlight Crop Extra Virgin Olive Oil
  • Gallo Olive Oil
  • Salt and pepper to taste

PREPARATION:
Cook the pasta in water with a drizzle of Gallo Olive Oil and salt.
Cut the vegetables into small strips and season with salt and pepper to taste.
Cook the vegetables over a strong heat with Gallo olive oil so as not to stick to the pan.
Fold the vegetables into the pasta and add Gallo Moonlight Crop Olive Oil as a finishing touch.

CHEF'S TIP:
To vary the taste, the pasta can also be served with spinach sauce (recipe below):

SPINACH SAUCE

INGREDIENTS:

  • 100ml low fat cream
  • 100g spinach leaves
  • Salt and pepper to taste

PREPARATION:
Heat the cream until it boils, add the spinach and simmer for 2 minutes. Blend in a food processor or blender and season with salt and pepper.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
