Secret Beef with Sweet Potatoes ("Escondidinho")

Serves: 6

INGREDIENTS:

  • 1kg Boiled sweet potatoes
  • 1 Package of cream
  • 30ml Gallo Extra Virgin Olive Oil
  • 500g Beef
  • 1 Onion (medium size, chopped)
  • 4 Garlic cloves (crushed)
  • 2 Tomatoes (peeled and chopped)
  • Salt and Pepper to taste

PREPARATION:
Crush the sweet potatoes while they’re still hot and place them in a pan with salt and Gallo Extra Virgin Olive Oil. When they’re properly mixed, add cream, mix and set aside. Sauté onion and garlic in a dribble of Gallo Extra Virgin Olive Oil. Add the meat and let it fry for a bit. Add the tomatoes and let them cook until they’re ready, add salt if necessary. In an olive oil-greased bowl, ideally made of clay, place a layer of mashed sweet potatoes, then the meat, and then finish with the rest of the mashed potatoes.  Sprinkle with grated parmesan and place it in the oven to melt the cheese.
