"Prego" (miniature steaks) with fried Potatoes

Serves: 4

INGREDIENTS:

  • 600g Beef cut into small steaks (sirloin or rump)
  • 200g Onions
  • 10g Garlic
  • 300g Potatoe chips fried in olive oil
  • 1 dl Gallo Late Harvest Extra Virgin Olive Oil
  • To taste * Mustard
  • To taste * Chopped Parsley
  • To taste * Salt and Pepper from the mill

PREPARATION:
Cut 4 onion rings, chopping the rest.
Slowly grill de onion rings
Heat half of the Gallo  Late Harvest Olive Oil, fry the crushed garlic, and the chopped onion, on a low fire, until it becomes a soft paste.
Season the steaks with salt and pepper froim the mill and then fry in  the skillet with the rest of the olive oil.
Place a metal hoop on teh plate and then put a layer of the chips, sprinkle parsley and then put the steaks on top of this and then the grilled onion ring on top of everything.
Then to the onion and garlic paste add the mustard and place ia spoonful ion the centre of the onion ring.
Sprinkle the remaining parsley over the top and the remaining chips.

CHEF'S TIP:
When you add the mustard to the garlic and onion "paste" it should not boil, so as not to make the mustard curdle.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
