Meat Loaf, with Mini-Vegetables and Potato Chips fried in Olive Oil

Serves: 4


  • 500g Minced meat (pork and beef)
  • 1 Egg
  • 50g Toasted bread crumbs
  • 125g Spring onions
  • 125g Cherry tomatoes
  • 300g Potatoes for frying
  • 1l Gallo Classic Extra Virgin Olive Oil
  • Salt and pepper, to taste

Peel and cut the potatoes in thin slices, then wash and dry. Fry in Gallo Classic Olive Oil at about 170ºC. Once fried, drain and then sprinkle with salt and pepper.
Add to the minced meat the egg, and then mix in the bread crumbs and season with salt and pepper.
Shape into a loaf and place in the oven with the cherry tomatoes on a baking tray drizzled with olive oil, and cook for 35 minutes at 180ºC.
When ready, slice and serve with the potato chips fried in olive oil.

The olive oil used for frying the chips can be used again for frying other things.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
