Chicken Fricassé with Green Peas

Serves: 4

INGREDIENTS:
• 600g Chicken Breast cut into cubes
• 160g Long Grain Rice
• 1dl Gallo Classic Extra Virgin Olive Oil
• 10ml Lemon Juice
• 2dl Cooking Cream
• 5g Chopped Parsley
• 400g Green Peas
• 100g Lettuce
• 100g Spring Onions
• 2 Egg Yolks

5) PREPARATION:
Fry the chicken breast cubes in the olive oil.
Add half the cream, half the lemon juice and then cook slowly.
Cook the rice in the chicken broth.
Stew the peas with the spring onions and the lettuce.
Whisk the egg yolks with the rest of the cream and the lemon juice.
Add this to the sucepan with the other things, cook slowly, so as not to curdle.
