Tuna Cubes with 4 types of Cheese

  • 500g Loin of fresh tuna
  • 1dl Gallo Reserve Extra Virgin Olive Oil
  • 25g Mustard Old Style
  • 25g Gorgonzola cheese
  • 25g Portuguese Cheese - Serra da Estrela
  • 25g Goat Cheese
  • 25g Portuguese Cheese - Nisa
  • To taste * saltb and pepper from the mill
  • To taste * Lemon juice

Season the tuna with the olive oil, lemon juice and salt and pepper.
Heat a non-stick skillet and brown the tuna cubes, on all sides, so that the less done is in the centre.
Put a piece of cheese on each of the cubes.
When ready add the seasoning sauce, let boil, add small bits of each type of cheese until sauce becomes creamy and serve with the 4 cheese sauce, and brushes of old style mustard.
Serve nice and hot.
