Salted Cod with Fish Stew Flavors

  • 150g Salted cod loin (soaked)
  • 50g Green bell peppers
  • 50g Red bell peppers
  • 100g Potatoes
  • 70ml Gallo Classic Extra Virgin Olive Oil
  • 50ml Gallo First Crop 2013.2014 Olive Oil
  • 25ml White wine
  • 1 Garlic clove
  • Onion and parsley to taste
  • Salt and pepper to taste

Place the cod in a baking tray and cover with the Gallo Classic Olive Oil and the crushed garlic cloves. Bake at 125ยบ for 30 minutes.
Boil the potatoes in water with salt.
Gently heat the onion and the peppers in Gallo Classic Olive Oil and add the white wine.
Peel the potatoes and cut into round slices.
Mix (until it forms an emulsion) the Gallo First Crop 2013.2014 Olive Oil with the crushed parsley and the garlic cloves that have been in the oven.
Place the cod on a plate over the bell peppers and cover with this emulsion.
Serve the cod with the potatoes on the side, garnished with parsley and drizzled with Gallo First Crop 2013.2014 Olive Oil.
