Poached Fish in Aromatic Vegetable Stock and Olive Oil

Serves: 1


  • 1 Mackerel (+- 600g)
  • 125g Aromatic vegetables (onion, carrot, celery, fennel bulb, leek and ginger)
  • 1dl Gallo Classic Olive Oil
  • 5ml Lemon juice
  • Freshly ground salt and pepper to taste

Clean the fish.
Chop the vegetables into round slices or julienne them.
Place in a pan, add the lemon juice and seasoning, add the olive oil and cover the pan. Cook over a low heat.
Serve with the vegetables and the juices from the poaching.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
