"Old Rags"

Preparation Time: MEDIUM
Serves: 4


  • 4 Frozen Codfish Loins (unsalted)
  • 200g Carrots
  • 250g Portuguese Cabbage
  • 250g Potatoes for Cooking
  • 100g Onions
  • 4 eggs
  • 2dl Gallo First Crop
  • Salt, to taste

Cook the cod and take away the skin and bones, put aside. Peel the potatoes and carrots, arrange the cabbage leaves. In the same water that you cooked the cod, cook the potatoes, the eggs (9 minutes) the carrots and the cabbage. Once cooked cut the potatoes into cubes, the carrots in slices and the cabbage into smaller pieces. in a skillet sauté the onions, sliced, in the Gallo New Crop olive oil and then add the cod, followed by the potatoes, carrots and the cabbage. Serve with the eggs sliced on top of the mixture.
