Hake Loins "Under Pressure"

Serves: 4

INGREDIENTS:
• 1 package of frozen hake loins
• 200g sliced bacon
• 2dl milk
• 1dl Gallo First Crop Olive Oil
• Salt and Lemon Juice, to taste
• Sprig of Thyme

PREPARATION:
Roll around the hake loins a slice of bacon.
Put in a pyrex dish, or alternative microwaveable container.
Add the milk, the olive oil, salt and lemon juice.
Cover well with a shrinkwrap film. Pierce the film with various holes with a sharp knife.
Put into the microwave, 900W setting, for about 6 minutes.
Take out from the microwave and carefully move arround the bowl so that the sauce does not come out and then put back into the microwave for about 4-5 minutes.
After this time it is ready to serve.
Cover with fresh thyme and serve with coriander rice, using the fish sauce.

CHEF'S TIP:
The minutes of your microwave should be altered if the equipment is not as powerful as 900W
