“Confit” of Cod Fish for Easter

Serves: 4

INGREDIENTS:

  • 600g cod fish loins
  • 2dl Gallo Reserve Extra-Virgin Olive Oil
  • 400g vegetable mix (eggplant, zucchini, green and red pimentos, onions and potatoes)
  • 1dl Gallo Classic Extra-Virgin Olive Oil
  • Garlic to taste
  • Bay leaf to taste


PREPARATION:
Place in a baking tray the garlic cloves and bay leaves and the cod fish loins without skin and bones. Drizzle with the 2dl of Gallo Reserve Extra-Virgin Olive Oil and bake for one hour in a preheated oven 150º C.

Slice all the vegetables mix ingredients.
Fry all the vegetable mix (eggplant, zucchini, green and red pimentos and onions) in 1dl Gallo Classic Extra-Virgin Olive Oil, adding the sliced potato and let it stew until the potatoes are cooked.
