Cod Loins in Traditional Flavored Sauce

Serves: 4


  • 4 units soaked Cod Loins 
  • 400g Potato Puré
  • 400g Turnip Greens
  • 150g Red Onions
  • 3dl Gallo First Crop 2015.2016 Extra Virgin Olive Oil
  • 15g Garlic

Place the cod loins in Gallo First Crop olive oil with the garlic, in a preheated oven of 150ºC for about 45 minutes.
Slice the onions and then sautée in the Gallo First Crop olive oil.
Prepare the mashed potatoes using the olive oil from the cod loins baking tray.
Cook the turnip greens in water and salt.
Serve cod loins and the greens with the mashed potatoes on each of the plates, using the remaining olive oil from the cod loins.
Serve piping hot.

If you want a creamy sauce, use a hand blender, adding the garlic cloves, blending a sort of mayonnaise.
