Warm Cake - Olive Oil, Honey and Cinnamon

  • 200G Sugar
  • 200g Flour
  • 6un Eggs
  • 1dl Honey
  • 1dl Gallo Late Harvest Extra Virgin Olive Oil
  • To taste * Lemon Zest
  • 5g Cinnamon Powder
  • 10g Baking Powder

Boil the honey and the Gallo Late Harvest Olive Oil for about 1 minute. Let cool.
Add the sugar and beat in the mixer. Separate the yolks from the whites.
Add the yolks and beat again.  Whisk the whites until fluffy and put aside.
Add the lemon zest, cinnamon, flour and baking powder to the mixture and beat. Carefully fold in the whisked egg whites.
Grease the baking tray with olive oil and flour. Bake in the oven at 175ÂșC for about 30 to 40 minutes (stick a wooden toothpick or clean sharp knife, and if baked it should come out clean).
Take out of baking tray and cut into squares and serve with cinnamon powder and icing sugar sprinkled on top. Drizzle with honey.

It can be served warm with a ball of vanilla ice cream
