Two Types Chocolate Mousse with Red Fruits

Serves: 4


  • 100g Dark Cooking Chocolate
  • 50g Mint Flavored Chocolate
  • 100g Sugar
  • 25ml Gallo First Crop 2015.2016 Extra Virging Olive Oil
  • 5 un. Eggs
  • 100g Red Fruits (raspberries, blackberries, redcurrants)
  • 125g low-fat greek yogurt

Separate the yolks from the whites.
Melt the chocolates with the Gallo First Crop olive oil, in the microwave or "Bain-Marie"
Whisk the yolks with 2/3 of the sugar.
Add the melted chocolates and whisk until the mixture is smooth and uniform.
Whisk the egg whites until the are stiff and add the rest of the sugar.
Fold into the whisked egg whites the chocolate mix and then put the mixture into individual bowl-shaped glasses and put into the refrigerator.
Put a spoon of the greek yogurt on top of each glass.
Decorate with the red fruits and a twig of mint.

Adding only part of the sugar to the egg whites is the trick so that they don't go liquid the next day!
