Red Berries Tarts

Serves: 4


  • 150G Flour
  • 50g Sugar
  • 70ml Gallo Olive Oil
  • 1 Egg yolk
  • 400g Frozen red berries
  • 50g Icing sugar
  • 50ml Lemon vinegar
  • 1 tbsp cornstarch

For the dough:
Mix the flour with the sugar and then add in the olive oil.
Beat in a mixer until the texture resembles sand
Add the egg yolk.
Knead until you obtain a smooth dough and cut into 4 pieces.
Place the dough into individual tart tins and let set for 20 minutes.

For the filling:
Place the fruits, sugar and cornstarch diluted in vinegar in a bowl.
Fill the tarts and bake for 35 minutes in a hot oven (170ºc).

Serve with an ice cream ball.
