Easter Egg Trio

Serves: 4

INGREDIENTS:

  • 3un Small Easter Eggs
  • 50g Mint Chocolate

FOR THE CHOCOLATE MOUSSE:

  • 200g black chocolate
  • 125g sugar
  • 6un eggs
  • 25ml Gallo Mild Extra-Virgin Olive Oil

FOR THE YOGHURT FILLING:

  • 100g Light Greek Yoghurt
  • 50g condensed milk
  • Easter Almonds to taste

PREPARATION:

Chocolate Mousse:
Melt the black chocolate adding the Gallo Mild Extra-Virgin Olive Oil.
Whisk the egg yolks with half the sugar and then add the molten chocolate.
Whisk the egg whites until stiff, add the rest of the sugar and continue whisking until it looks like merengue.
Fold in the merengue with the first mix.

For the mousse with mint flavor:
Melt the Mint Chocolate and mix in into the mousse.

For the yoghurt filling:
Fold in the light Greek Yoghurt with the condensed milk.
Put on individual plates half of the Easter Eggs and fill each half with a varied filling.
