Christmas Cake with Chocolate Ganache

INGREDIENTS:
For the cake:

  • 100ml Gallo First Crop 2018-2019
  • 450g Wheat flour
  • 10g Baking powder
  • 230g Sugar
  • 3 Eggs
  • 200ml Orange juice
  • 1Tbsp Orange zest

For the ganache:

  • 50ml Gallo First Crop 2018-2019
  • 200g Dark chocolate
  • 400ml Cream
  • 125g Berries (raspberry, blackberry and blueberry)

PREPARATION:
For the cake:
Mix the Gallo First Crop 2018-2019 with the orange juice and zest. Beat the eggs and sugar, and add the liquid mixture. Then, mix the baking powder and flour, and involve it in the previous solution. Grease a baking tray with the remaining olive oil and flour and leave it to bake at 170ºC (338°F) until it is cooked (approx. 25/30 minutes). Once it has cooled down, unmold and cut it into the shape of a Christmas tree.

For the ganache:
Heat up the cream, add Gallo First Crop 2018-2019 and dark chocolate cut into small pieces, and stir it to make the consistency uniform. Pour the ganache across the cake and decorate it with the berries.

CHEF'S TIP:
You can bake the cake in the shape of a tree or any other shape of your liking to make it easier.
