Chocolate Souflé

Serves: 3


  • 3 Tablespoons of Gallo Reserve Extra Virgin Olive Oil
  • 3 Tablespoons of flour
  • 250ml Milk
  • 150g Sugar
  • 3 Eggs
  • 150g Cooking Chocolate

Pre-heat the oven to 190ºC. Start by greasing the mould with the Gallo Reserve olive oil and then sprinkle them with sugar. Add the olive oil to the flour until it becomes a soft mass. In a saucepan boil the milk with the sugar, lower the flame and then add the soft mass and stir until it becomes a paste.

Then add the chocolate, broken into small pieces, break the eggs putting the yolks into the saucepan and stir. Put this into a bowl and let it cool off. Then whick the white until stiff and fold in with the chocolate paste. Fill the moulds with the chocolate paste and clean the borders. Then put in the oven for 17 minutes without ever opening the door.
Serve immediately.

Clean the orders properly so that the souflé grows uniformly.
