Chocolate Mousse with Hazelnuts

Serves: 1 Big Bowl

• 200g Dark Chocolate Cooking Bar
• 6un Eggs
• 50ml Gallo Reserve Extra Virgin Olive Oil
• 100g+25g Sugar
• 100g Hazelnut Kernels
• 2dl Cream

Melt the chocolate, with the olive oil, in "bain-marie".
Whisk the egg yolks with the sugar (100g) until creamy and fluffy.
Add the melted chocolate, stirring vigorously.
Whisk the cream and fold into the mixture.
Whip the egg whites, with the remaining sugar until stiff.
Fold in the mixture and put in the refrigerator.
Crush the hazelnut kernels and sprinkle on individual servings.
