"Broken Up" Pudding, served with Red Fruit

Preparation Time: MEDIUM
Serves: 4


  • For pudding
  • 8 un Egg Yolks
  • 1/2 lt Milk
  • 200g Sugar
  • 50 ml Port Wine, sweet
  • For caramel sauce
  • 100g Yellow Sugar
  • 25ml Gallo Reserve  Extra Virgin Olive Oil
  • For red fruit salad
  • 100g Raspberries
  • 100g Blackberries
  • 50g Red Currants
  • 25ml Gallo Red Wine Vinegar

Prepare the pudding, whisking all the ingredients together.
Prepare the caramel sauce heating the Gallo Reserve Olive Oil with the yellow sugar, leaving it on the burner until itv caramelises. Spread this over the pudding mould and place this in a tray with boiling water cooking for about 30 minutes.
Prepare the red fruit salad, sprinkling with Gallo Red Wine Vinegar before serving.

To avoid the water boiling in the tray and splashing on the pudding wrap the pudding mould with a damp kitchen towel.

The Gallo products that the Chef suggests for this recipe can be substituted by other Gallo varities of your preference. Experiment and share your incredible combinations!
